The beans have the fragrance of toasted black walnut, soil, ash, clove, stale cumin powder, rye, tobacco, leather, alder wood, kombu, and green lentil.

The grounds have the fragrance of tart cherry, soil, clove stem, cumin powder, wheat, tobacco, leather, hickory, blackberry, cream, lotus, and kombu

CUPPING

The aroma is of alder, soil, kombu, tart cherry, Marion berry, hickory, onyx chocolate, mirth, soy, anchovy paste, raisin, and molasses

This is a medium body coffee that is creamy with a velvety and sticky mouth feel but is very silky too

This is a low acidity coffee that is dry and dirty. It lingers and is unbalanced with a muted note through out

The flavors of this coffee are of hickory, raisin, tart dried cherry, mirth, kombu, flax seed, onyx chocolate, clove stem, long pepper, rubbed sage, rye, black walnut, toasted brown rice, and an umami aspect.

As it cools cream notes develop like of condensed milk along with a sweet note like of vanillin and a tart citrus note

CUPPING

The aroma is of Blood orange, strawberry, amaranth, white peach, rose hip, Asian pear, sandalwood, alfalfa, bosc pear, red grape, summer savory, dried Meyer lemon, and soil

This is a medium body coffee that is smooth with a verity and syrupy feel but has a slightly sticky coating

This is a mild acidity that is more fruit forward with a wine like tannin to it rather then a complex acidity

The flavors of this coffee are cara cars orange, alfalfa, summer savory, dried goji berry, baby banana, cream, bing cherry, cream of tartar, dried apricot, cocktail lime, and white cranberry.

As it cools notes of tobacco, soil, and a meat like taste come through along with more of a tart citrus flavor like of white grapefruit and hibiscus
