The grounds have the fragrance of white cranberry, bergamot, blackberry, marionberry, lemon verbena, hazelnut, sun-dried tomato, dutch process cocoa powder, plum, green papaya, milo wood, green grape, black cardamom, and leather
CUPPING
The aroma is of burlap, dried guava, green papaya, marshmallow, white cranberry, bergamot, marionberry, white grapefruit pith, hazelnut, dutch process cocoa powder, milo wood, black grape, black cardamom, leather, sapote, and black current
The body is heavy with a thick and sticky feel at first tapering to a syrupy finish that is velvety
This is mild acidity with a blood orange like tartness tapering to a lingering and dirty malic taste like of green apple
The flavors are of blood orange, cream, bergamot, yellow tea, black currant, toasted hazelnut, blackberry, dried guava, green papaya, marshmallow, white cranberry, green grape, Mitzu apple, freeze-dried raspberry, dried mango, cocoa powder, blue corn, pickled watermelon rind, and roasted poblano on the finish
As it cools notes of a meat-like come out along with a creamy note and a heavy vegetable like bell pepper and oregano
GINO
The aroma is of dried guava, bergamot, black grape, goji, vanillin, white grapefruit pith, hazelnut, and black tea
The body weak with a tea-like consistency and is very slick
The acidity is much like the cupping but is more citrus sweet wth no malic undertone
The flavors are of hibiscus, bergamot, goji, dried guava, sumac, green papaya, white cranberry, the skin of dried chili, and bell pepper. As it slightly cools a creamy note develops along with a strawberry and blood orange sweetness
I can not say this is the best method for this but it does bring out a unique flavor profile and for those who don’t like high acidity I would recommend
