The beans have the fragrance of malt, cocoa powder, fresh tobacco, plantain, parsley, dried papaya, bottle brush, iodine, sassafras root, allspice, sandalwood, peanut butter, dill, sapote, dried strawberry, marshmallow, cashew, gray salt, wheat germ, orange pith, apricot flower, and instant black tea

The grounds have the fragrance of red currant, plum, sassafras root, cream, sapote, celery juice, raspberry, dried strawberry, fresh tobacco, cocoa nib, damp soil, sandalwood, orange pith, yucca root, goat cheese, blanched cashew, parsley, squash blossom, and dried bell pepper,


CUPPING

Aroma

The aroma is of sassafras root, yucca root, blackberry, soil, walnut butter, stewed green papaya, bottle brush, fresh tobacco, sandalwood, plum, celery, thyme, tamarind, tomato paste, malt, bacon fat, burnt avocado leaf, and allspice

Body

This is a heavy-bodied coffee that is thick and velvety with a lingering creamy and thick back note

Acidity

This is a medium-high acidity coffee that is tart and bright all the way through from tart berry and spice

Flavor

The flavors of the coffee are of grilled orange, sapote, plantain, malt, tobacco, bottle brush, tamarind, burnt tomato paste, black currant, smoked salt, tart cherry, mesquite seeds, roasted artichoke, black walnut, tobacco, plum, soy sauce, shishito pepper, black grape, white cranberry, burnt avocado leaf, Mexican chocolate, yucca root, celery salt, and cayenne

As it cools notes of cherry and creamy vegetable with a Eureka lemon tartness and hibiscus 


AeroPress

The aroma is black tea, orchid, blanched almond, tapioca flour, and pea flower, and a smokey note

The body is weak and tea-like

The acidity is very low with an astringent floral notes that are very delicate and weak

The flavors of the cup are of black tea, orchid, tamarind agua fresca, tapioca flour, soil, yucca root, tobacco, and sapote

This makes this coffee undrinkable

The grounds have the fragrance of raspberry, jasmine, squash blossom, malt, freezer dried strawberry, magnolia, peach, Brazil nut, fresh tobacco, gooseberry, clay, rhubarb, caramel, leather, chamomile, carton, and grape leaf


Cupping

Aroma

The aroma is of fresh tobacco, malt, nugget, apricot jam, raspberry, squash blossom, calimodian, magnolia, yellow peach, cashew, sassafras root, dried mint, gooseberry, clay, yucca root, and damp soil

Body

This is a full-bodied coffee that has a creamy coating with a strong juicy complexity staying with you throughout

Acidity

This is a medium-high acidity sweet and juicy with a delicate tartness like of grilled Meyer lemon.

Flavor

The flavor is of overripe pineapple, Cara cara orange, fresh tobacco, cashew, grilled peach, apricot, amaranth, cocoa powder, gooseberry, caramel, pink lemon, shishito pepper, bing cherry, grilled Meyer lemon, sandalwood, passion fruit juice, rhubarb fruit leather, camomile, hibiscus powder, and pink guava

As it cools notes of red grape-like cabernet develop along with chocolate ganache, pomegranate molasses, and dried hoops


Fellow Stag XL

The aroma is very weak and more earthy and a very subtle fruit note

The body is mild with it being more of a black tea than a coffee

The acidity is low with a warming spice feel like of nutmeg and cinnamon

The flavors of the cup are of black tea, camomile, black cardamom, dried navel orange, magnolia, plantain, walnut, raspberry leaf, and dutch prosses cocoa powder
