The beans have the fragrance of malt, strawberry, passionfruit flower, magnolia, peach, cashew, apricot jam, amaranth, alfalfa, cocoa powder, gooseberry, fresh tobacco, granola, whipped cream, rhubarb fruit leather, citron, puffed brown rice, wet wood, and chervil.

The grounds have the fragrance of raspberry, jasmine, squash blossom, malt, freezer dried strawberry, magnolia, peach, Brazil nut, fresh tobacco, gooseberry, clay, rhubarb, caramel, leather, chamomile, carton, and grape leaf

Aroma

The aroma is of fresh tobacco, malt, nugget, apricot jam, raspberry, squash blossom, calimodian, magnolia, yellow peach, cashew, sassafras root, dried mint, gooseberry, clay, yucca root, and damp soil

Body

This is a full-bodied coffee that has a creamy coating with a strong juicy complexity staying with you throughout

Acidity

This is a medium-high acidity sweet and juicy with a delicate tartness like of grilled Meyer lemon.

Flavor

The flavor is of overripe pineapple, Cara cara orange, fresh tobacco, cashew, grilled peach, apricot, amaranth, cocoa powder, gooseberry, caramel, pink lemon, shishito pepper, bing cherry, grilled Meyer lemon, sandalwood, passion fruit juice, rhubarb fruit leather, camomile, hibiscus powder, and pink guava

As it cools notes of red grape-like cabernet develop along with chocolate ganache, pomegranate molasses, and dried hoops


Fellow Stag XL

The aroma is very weak and more earthy and a very subtle fruit note

The body is mild with it being more of a black tea than a coffee

The acidity is low with a warming spice feel like of nutmeg and cinnamon

The flavors of the cup are of black tea, camomile, black cardamom, dried navel orange, magnolia, plantain, walnut, raspberry leaf, and dutch prosses cocoa powder

The grounds have the fragrance of baked strawberry, camomile, black apple, Asian pear, hibiscus, key lime, blackberry, leather, pomegranate, cara cara orange, gooseberry, dried mango, honey comb, chicory, oak, cocoa powder, and a hint of sour cream

The aroma of this coffee is of burlap, cocoa powder, baked blackberry, chicory, dried papaya, honeysuckle, gooseberry jam, tamarind, plumeria, frankincense, strawberry compote, blood orange molasses, winter savory, Brazil nut, port wine, blueberry, soy, gray sea salt and crowberry

Body

This is a medium — full-bodied coffee that is smooth with a silky creamy mouth feel tapering to a chewy coating

Acidity

This is a high acidy coffee that is bright and tart citrus-forward that lingers with a sharp dirty feel that lingers throughout leaving a tart green apple-like feel

Flavor

The flavors of this coffee are of key lime, white cranberry, dutch process cocoa powder, blackberry, green papaya, honeycomb, gooseberry, allspice, granny smith apple, pomegranate molasses, winter savory, macadamia nut milk, hibiscus, white asparagus, jasmine, chicory, white miso paste, plantain, Seville orange, vanillin, oak, dandelion, and golden raisin.

As it cools notes of bourbon, and vanillin develop alone with subtle hints of plum and blood orange.
